I'd be willing to bet that over 95% of the sites hosted here use plaintext for usernames and passwords. It's a bummer, but your mention of encryption plugins makes me want to explore that option for some sites I host.

That doesn't actually encrypt the login process. All it does is change the algorithm used to hash passwords in the database.
