SSL, Domains, Subdomains, and Cloudflare

This may get a bit complicated, so I’ll apologize in advance. I have a domain hosted by Dreamhost with a Let’s Encrypt certificate, and Cloudflare. That domain also has several subdomains with certificates, but not currently using Cloudflare.

I also have several domains from Google Domains, that forward to my Dreamhost subdomains. Those domains already use Cloudflare, so I suspect that adding the Dreamhost subdomains to CloudFlare makes sense.

I could simply remove the Google domains from Cloudflare and put the Dreamost subdomains on Cloudflare, but that makes it difficult for me to go to a backup server (self-hosted) in the event a service outage, etc. Any thoughts on the best way to deal with this?

After some experimentation, I’ve found that I can add Cloudflare to the subdomains. I don’t know if there is anything to be gained by doing so, but since there is no apparent problem, I’ll leave it that way, unless anyone can come up with a reason not to.
