Spam prevention through mock e-mail address

A while ago a Dreamhost newsletter mentioned something about a method of spam prevention by mock e-mail addresses. Like using bob.smith@domain.com instead of bob@domain.com, or something like that. I don’t remember how to use it and I can’t find any articles on it in the support wiki. So, my question is: What is it and how do I use it?

It’s called “plus addressing” and you use it by appending a “plus sign” ("+") and some other identifier (which can be any legal string of characters) to the user’s address.

For instance, if the user’s email address is "john@domain.tld, " you could use “john+signup@domain.tld” or “john+usedonce@domain.tld”.
