I am not a dev so pardon my lack of background in this domain.
I am looking to increase the flavor disk space from, what I understand is the default 80GB, to something much more.
I have no clue how to do this. Any help would be amazing.

I too am waiting for the day to increase volume size for my instances…
Here is my past inquiry into this issue for reference and how DreamHost Support suggested I increase my volume size (DreamCompute: How to Increase Volume Size?).
I would suggest starting a new instance with the new volume size you need. Be sure to make a backup of your site files and any databases that you may have so that you can transfer them to your new instance.
